3. Badam Halwa:
You Will Need:
1 ½ cups almonds, blanched
2 cups of water
5-6 green cardamom, crushed
4 strands of saffron
½ cup of sugar
½ cup water or milk
¼ cup of coconut oil
How To:
Blend the almonds with 2 cups of water to make a smooth paste.
In a heavy bottom pan, cook the almond paste until it thickens.
Now add sugar and combine well.
Add water or milk and keep stirring.
Now add coconut oil and stir until the mixture becomes thick and lumpy.
Finally, add saffron and cardamom and stir again.
You can stir the halwa straight away or cool and cut into diamond shape.
4. Gajar Ka Halwa:
You Will Need:
2 ½ cups grated carrots
8 tablespoons of sugar
2 ½ cups of milk
5-6 of cardamom, powdered
⅓ cup of evaporated milk/khoya
8-10 chopped cashews
12-15 raisins
7-8 pistachio, chopped
A pinch of saffron
2½ tablespoon ghee
How To:
In a wok, mix grated carrot with milk and cook for 15 to 20 minutes.
Now add cardamom powder and stir.
When the mixture starts thickening, add ghee and sugar.
Now add the dried fruits, saffron, and almond paste and cook for 2 to 3 minutes.
Serve the halwa warm. It is an easy diwali sweets for children to make.
