 11. Open Face Egg Sandwich
This is similar to the sunny side up recipe, except it comes with a slice of bread at the bottom. It can also be a decorative sandwich that your kids would love to try.
You will need:

1 egg, beaten
½ cup diced cheese, low fat preferably
2 tablespoons fresh or dried chives
2 slices tomatoes
1 slice brown or whole wheat bread
How to:

Heat a skillet on medium flame. Coat it with cooking spray and add the beaten egg.
Cook the egg for a minute or until it starts setting around the edges.
Add cheese and chives on top, but do not stir. Let the cheese melt on it.
Once it is fluffy, remove it from the pan and put it on top of the bread slice.
Top it with the tomato slices and serve.

12. Boiled Egg Sandwich
Boiled egg alone is boring. But when you slice it and put it between slices of bread, with other toppings, it becomes interesting.
You will need:

1 hard-boiled egg
1 sliced bagel
1 large tomato, sliced
1 lettuce leaf
How to:

Toast the bagel and slice the egg.
Top one half bagel with the egg slices, lettuce leaf, and tomato slices.
Cover it with the remaining half of the bagel and serve.
