You will need:
¼ cup creamy peanut butter
½ cup finely shredded carrot
1 tablespoon apricot marmalade
2 teaspoons raisins
How to:
Mix the peanut butter, raisins, grated carrots, and marmalade in a bowl. Whisk it well to make a creamy spread.
Use the sandwich spread on bread, tortilla rolls, or bun for a healthy snack.
10. Roasted Pumpkin Sandwich
Pumpkin is rich in essential nutrients that your child needs to stay healthy. So why not make a sandwich filling out of it?
You will need:
100 grams pumpkin
½ avocado
1 carrot, small
4 slices whole grain bread
1 large iceberg lettuce leaf
How to:
Preheat the oven to 160ºFahrenheit.
Peel the pumpkin and remove the seeds. Put the pumpkin on a baking tray or sheet and cook for ten minutes. Once done, let it cool and slice it thinly.
Peel the avocado and remove the seed. Mash it lightly in a bowl, using a fork.
Spread the avocado paste on two bread slices. Top it with grated carrot, lettuce leaf, and pumpkin slices.
Cover with the remaining two bread slices to complete the sandwich.
