7. Cucumber Cream Cheese Sandwiches
Cucumber is a natural body coolant. Combine it with cream cheese, and you have a healthy, creamy vegetable sandwich for kids.
You will need:
6 slices whole grain bread
4 ounces cream cheese
½ cucumber seeded and sliced thinly
Juice and zest of one lemon
2 tablespoons fresh dill
Salted butter
Black pepper, ground
Salt to taste
How to:
Tap dry the thinly sliced cucumber with a paper towel. Set them aside.
Mix the cream cheese, dill, lemon zest and juice, salt and pepper in a bowl.
Butter one side of the bread slices and spread the cream cheese mix on top.
Top three slices of bread with the cucumber slices, you can add two-three slices.
Cover the cucumber with the remaining bread slices and cut off the edges.
Cut the bread slices into equal triangles and serve.
8. Grilled Sandwich With Pears
Here’s another fruity sandwich recipe for kids’ lunch box, and yourself too!
You will need:
2 thick slices of French bread
2 slices of Brie cheese
2 tablespoons softened butter
6 slices pear
12 fresh thyme leaves
Salt and pepper to taste
How to:
Heat a skillet on medium flame.
Butter one side of each bread slice and place it on the skillet, the buttered side down.
Arrange the Brie cheese slices on one of the bread slices, and sprinkle thyme on it. Let it melt a little.
Now place the pear slices on the cheese and sprinkle salt and pepper for taste.
Cover the bread slice with pears with the other one.
Flip the sandwich and cook it for two to three minutes.
Take it off heat and cut it diagonally. Serve warm.
