7. Cauliflower Soup:
You Will Need:
Olive oil
Chopped onion
Celery
Carrots
Cauliflower
Salt and pepper – optional
Flour
Vegetable broth
Cream
Shredded cheddar cheese
Red pepper flakes – optional
How To Make:
Heat the oil in a pot. Add onions, carrots, celery, salt, and pepper. Sauté until the vegetables turn tender.
Add flour and cook for another four to five minutes. Add the vegetable broth and mix well. Add the cauliflower.
Let this all boil. Reduce the heat and let it simmer until the cauliflower turns tender.
Churn the mix in a blender. Put it back into the pot and cook on medium flame.
Add the cream and red pepper flakes. Let it come to a boil.
Garnish with cheese.
8. Sweet Corn Soup:
You Will Need:
Sweet corns
Milk
Corn flour
Chopped coriander leaves
Chopped spring onions
Salt and pepper – optional
How To Make:
Cook the corn separately in a pressure cooker until tender.
Put the remaining corn in a blender and add half of the milk and salt. Blend to make a smooth paste. Strain the mix.
Put it in a pan and cook on low heat. Add some milk and coriander in the pan. Let it boil on a medium flame for about five minutes.
Use the remaining milk to dissolve the corn flour. Mix well and add to the pan along with the seasoning.
Garnish with spring onions.
