9. Potato Bacon Soup
You Will Need:
6 slices bacon (thick)
4 cups potato cubes
½ cup carrots, chopped
½ cup onion, chopped
1 stalk celery, chopped
1 ½ tsp olive oil
4 cups low sodium, low fat chicken broth
½ cup shredded cheese
1/8 tsp cayenne pepper
½ tsp kosher salt
How To Make:
Cook bacon in a saucepan, until it is crisp and turns light brown. Drain the fat by dabbing the bacon slices with a paper towel. Discard the grease and wipe the pan clean.
Prepare the vegetables by adding olive oil in the saucepan. Add the vegetables – celery, onion, and carrots – and sauté them for about three to four minutes or until the vegetables become tender.
Stir in the chicken broth into the pan. Add the potatoes and pepper to this concoction and bring it to a boil. Simmer the liquid and let the soup cook for about 15 minutes, until the potatoes and the vegetables become soft.
Stir in the cheese and let it melt completely.
Chop the bacon and add it to the soup, add salt to taste and let it cook for a minute more.
Serve hot.
10. Garlic Mashed Potatoes Recipe
You Will Need:
8 potatoes, peeled and quartered
2 cloves garlic
½ cup milk
¼ cup butter
2 tbsp sesame seeds
1 pinch white pepper powder
Salt to taste
How To Make:
Boil potatoes in a large pan, until they become soft but firm. Drain the water and let them cool.
Add milk, butter, garlic cloves, salt, and pepper to the potatoes and mash them using a masher or an electric mixer. Mash it to your desired consistency and garnish with sesame seeds.
Serve.
