5. German Potato Salad Recipe
You Will Need:
5 potatoes
4 eggs, hard-boiled
¼ cup creamy salad dressing
2 tbsp parsley, freshly chopped
2 tbsp pickled gherkins
2 tbsp vinegar
1 finely chopped onion
½ tbsp sugar
Salt and ground pepper to taste
How To Make:
In a large bowl, boil the potatoes for 15 to 20 minutes. Once they are tender, drain the water and let them cool. Peel the potatoes and dice them.
In another bowl, whisk sugar, salt, pepper, and vinegar. Then add the diced potatoes and top with the salad dressing.
Cut the boiled eggs into wedges and fold three-fourth eggs into the mixture.
Garnish the mixture with parsley and remaining eggs.
Cover the bowl and refrigerate for an hour.
Serve when ready.
6. Potato And Leek Soup
You Will Need:
2 leeks, cleaned and finely chopped
6 potatoes, peeled and diced
2 cups chicken broth
2 tablespoons butter
½ cup chopped onion
4 ounces of cheddar cheese
1 cup half and half
I tbsp chopped parsley
1 tbsp garlic powder, or 3 garlic cloves, finely chopped
Salt and pepper to taste
How To Make:
In a pan, melt butter and add the onions and chopped leeks. Cook until tender, or for about five minutes.
Stir in the chicken broth and the potatoes into this mixture. Cook for 20 minutes or until the potatoes are tenderly cooked.
Add the half-and-half into this soup and cook on a low flame for about 15 minutes, until the soup thickens a little.
Add the cheddar cheese, garlic powder, salt, and pepper while stirring the soup. Cook for another five minutes until the cheddar melts.
Serve hot.
