3. Red Potato Salad
You Will Need:
2lb potatoes, scrubbed cleaned
1lb bacon
6 eggs
2 cups mayonnaise
1 stalk celery
1 onion
Salt and pepper
How To Make:
Boil the potatoes in a large pan. Cook them until they are tender, but firm. Drain the water and let them cool.
Bring the eggs to boil in a saucepan – let them cook for at least 12 to 15 minutes.
Place the bacon in a large skillet, cover it and cook it over medium flame until it becomes medium brown.
Dice the cooled potatoes – let the peel be on.
In a large bowl, add the potatoes, bacon, eggs, chopped onion, and sliced celery. Mix them and add mayonnaise, salt, and pepper for taste.
Mix it again once, without mashing the potatoes and refrigerate it for an hour.
Serve when ready.
4. Grilled Mustard Potato Salad
You Will Need:
3 red potatoes
3 Yukon gold potatoes
½ tsp celery salt
¼ cup canola oil
¼ tsp pepper
2 tsp distilled vinegar
1 tsp Dijon mustard
How To Make:
Preheat the grill, if you have an outdoor one, on high heat.
Boil the potatoes in a large bowl and cook for at least 15 minutes or until they turn tender, but firm. Drain the water and let them cool.
Mix canola oil, Dijon mustard, vinegar, celery salt, and pepper.
In another bowl, add the potatoes and toss half the mixture onto them.
On a single layer sheet of foil, arrange the potatoes with the salad mixture and prepare to grill.
Cook for seven to nine minutes or until they turn brown, turning them occasionally.
Remove from the grill, and let them cool. Toss the remaining salad dressing on these potatoes and serve.
