5. Beet Pancake:
You Will Need:
1 cup of all-purpose flour
¾ cup of whole-wheat flour
1 tablespoon of brown sugar
1 tablespoon of baking powder
¾ cup of beet puree
¼ cups milk
1 cup of plain Greek yogurt
1 egg
3 tablespoons of unsalted butter, melted butter
1 teaspoon of vanilla essence
How To:
In a bowl, sift whole wheat flour, all-purpose flour, sugar, baking powder and kosher salt.
In another bowl, add beet puree, milk, egg, butter, Greek yogurt and vanilla and mix well.
Add the dry ingredients to the wet ingredients and stir until well combined.
Grease a frying pan with oil and drop two tablespoons of pancake mixture into it.
Cook the pancake for 3 minutes and flip. Continue cooking for another 3 minutes and serve with honey or raspberry sauce. It is an easy to prepare beetroot recipe for kids to add to their plate.
6. Beet Hummus:
You Will Need:
1 large beet
1 can of chickpeas
¼ cup of tahini paste
2 lemons
4 oz. crumbled goat cheese
1 teaspoon of salt
¼ cup olive oil
How To:
Scrub and chop the beets into large cubes and bake at 400 degrees Fahrenheit for about 25 to 30 minutes.
In a food processor, combine beet, rinsed chickpeas, and juice of two lemons, goat cheese, tahini paste and salt. Pulse until well combined.
Pour the olive oil while the food processor is running. Blend until smooth.
Serve with seeded crackers, veggie sticks, or cold salad as a dip. It is an amazing beet recipe for kids and now your kid will definitely be a beet lover.
