11. Red velvet cake
You will need:
2 ½ cups all-purpose flour
1 ½ cups sugar
2 tablespoons unsweetened cocoa
1 teaspoon salt
1 ½ cups vegetable oil
1 cup buttermilk
1 teaspoon vanilla extract
1oz red food color
2 eggs
For frosting
½ cup all-purpose flour
1 ½ cups milk
1 ½ cups sugar
1 ½ cups butter, softened
1 tablespoon vanilla
How to:
Preheat the oven to 350º. Grease and flour two eight-inch baking pans.
In a large bowl, beat the ingredients for the cake using an electric mixer for at least two minutes on medium speed and 30 seconds on low speed.
Pour the batter into the pans and bake for 30-35 minutes or until the toothpick, inserted in the center, comes out clean. Let the cakes cool completely, on the cooling rack.
Whisk the flour and milk in a saucepan, until the mixture is smooth. Cook this on medium heat, while constantly stirring, until it becomes thick and creamy. Let it cool.
In another bowl, blend the sugar and butter using and electric mixer. Stir in spoonfuls of the flour mixture and beat properly. Add in the vanilla and whisk.
Place a cake on the serving plate and spread one cup of frosting on top. Place the other cake on top of this and frost the top and the sides.
12. Chocolate sheet cake
You will need:
1/2 cup butter
2 ¼ cup all-purpose flour
3 eggs
1 ½ cups granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1 ¼ cups buttermilk
2 teaspoon vanilla extract
1 teaspoon baking soda
For icing
1 cup icing sugar
2 tablespoons cocoa
1 tablespoon milk
40g butter, softened
How to:
Preheat the oven to 350ºF. Grease a 9×13 inch baking tray and dust it with flour.
In a large bowl, blend the butter and sugar using an electric mixer until you get a creamy, fluffy mixture. Scrape the sides.
Beat in the eggs one at a time, into the cream mixture. Add in the vanilla extract next.
In another medium bowl, mix the flour, the baking powder, baking soda, and salt. Add this to the butter mixture and blend until all the ingredients mix properly.
Add the buttermilk and beat the mixture slowly for one minute, and whisk it quickly for around three minutes.
Pour this batter into the prepared pan and bake it for 25-30 minutes. You can also test by placing a skewer in the center of the cake. Remove from the oven and let it cool completely.
Sift the icing sugar and cocoa into a medium bowl. Add the milk and butter and whisk it using an electric mixer for around two to three minutes.
Spread the chocolate icing on the cake. Add color sprinkles and celebrate.
