7. Ring cake with pink icing
You will need:
250g unsalted butter
250g unrefined caster sugar (golden brown)
250g self-raising flour
5 eggs
1 ½ teaspoon vanilla extract
1 teaspoon baking powder
For icing
1 pack (125g) fondant sugar
1 teaspoon pink food coloring
1 teaspoon strawberry flavor
Sprinkles for decoration
How to:
Preheat the oven to 350ºF. Grease a one-kilogram ring mold with cooking butter.
Blend sugar and butter in an electric mixer until it becomes light and fluffy. Add in the vanilla extract and mix again.
Beat in the eggs one at a time and mix until they blend properly. Add a little flour to prevent curdling.
Stir in the rest of the flour to the butter mixture and beat until it is smooth.
Pour the batter into the ring cake mold and bake in the preheated oven for 35-40 minutes or until firm. Let it cool completely.
Prepare the icing as directed on the pack, to get the right consistency. Add the food coloring and strawberry flavor and mix it well.
Pour the glaze over the cake and top it with the sprinkles. Add strawberry slices to the glaze. Serve fresh.
8. Yellow cake with cream frosting
You will need:
2 cups plain flour
1 ¼ cup sugar
½ cup butter, softened
1 teaspoon salt
1 tablespoon baking powder
1 cup milk
2 eggs
1 teaspoon vanilla extract
For whipped cream frosting
½ cup heavy whipping cream
1 tablespoon sugar
½ teaspoon vanilla extract
How to:
Preheat the oven to 350ºF. Grease and flour two eight-inch baking pans.
Sift the flour and combine it with salt, baking powder and sugar in a large bowl.
Stir in the butter, milk, and vanilla extract into the flour mixture and beat using an electric mixer.
Add the eggs one at a time and beat the mix slowly each time.
Divide the batter between the two baking pans and bake for 30-35 minutes. Once done, allow them to cool completely on the wire racks.
Combine the ingredients for the frosting in a bowl, cover and refrigerate it for 30 minutes. Then whisk it until it becomes smooth and fluffy.
Put one cake on the tray and spread some of the whipped cream frosting on it.
Place the other cake on top of it and spread the remaining cream on the top and at the sides.
