You will need:

1 cup self-raising flour
1 cup coconut sugar, or white sugar
1 ¼ cups ground almonds
1 1/3 cup soy milk
½ cup liquid coconut oil
2 teaspoons almond essence
1 tablespoon apple cider vinegar
1 teaspoon baking powder
7oz glace cherries, chopped
Icing sugar
Flaked almonds
How to:

Preheat the oven to 350ºF. Line a nine-inch springform pan.
Mix the flour, sugar, ground almonds, and baking powder in a large bowl.
Mix the wet ingredients – soy milk, coconut oil, almond essence, and apple cider vinegar – in a jug.
Stir in the liquid into the flour mix, until you get a smooth but thick batter.
Stir in the glace cherries.
Pour the cake mix into the prepared springform pan and bake for 40-45 minutes in the preheated oven.
Let it cool before decorating with icing sugar, flaked almonds, and cake toppers.

4. Easy chocolate party cake
You will need:

2 cups all-purpose flour
1 ½ cup whole milk
2/3 cup granulated sugar
2/3 cup dark brown sugar
¾ cup butter
½ cup unsweetened cocoa
3 eggs
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons vanilla extract
½ teaspoon salt
1 cup cream cheese frosting
How to:

Preheat the oven to 350ºF.
Butter two eight-inch pans and then dust them with some flour.
In a large bowl, combine the dry ingredients. Stir in the eggs one at a time, the milk, and other wet ingredients. Beat it using an electric mixer, for three minutes.
Divide the batter between the two pans equally. Bake the cakes for 20 minutes or until the tops of the cakes spring back when touched. Let the cakes cool for ten minutes in the pan.
Take the cake out of the pan and let it cool completely.
Line the serving plate with parchment paper or waxed paper.
Use a serrated knife to smooth the tops of the cakes. Place the trimmed side of one cake in it.
Spread the top of this cake with half the cream cheese frosting. Place the other cake with the smooth side on top, on the cake frosted cake. Spread the remaining cream cheese frosting on the top and the sides of the cake.
Remove the paper strips and serve.
